Breakfast tortilla recipe

During my week days, breakfast is a rushed afterthought so when the weekend rolls around I absolutely love taking the time to conjure up something a little more creative.


That being said, this delicious breakfast recipe is by no means a chore and can be made in a very short amount of time. It's simply a matter of making up some pico de gallo, heating some beans, grating cheese and frying an egg. Seriously, it's that simple.

This recipe was my first time using a lot of different things. It was my first time baking tortillas and creating the warm, crispy plate which the rest of this dish sat on perfectly. It was my first time making pico de gallo, which I am now a seasoned pro of whipping it up whatever the hour for whatever the dish. Learning how to make pico de gallo has seriously been such a game changer - it's so easy, but tasty as anything. An instant meal elevator.

THE INGREDIENTS
To make 4 tortillas.

4 corn tortillas
2 cups refried beans, warmed in the microwave
1/2 cup grated cheddar cheese
4 fried eggs
2 cups pico de gallo (I follow this Cookie & Kate recipe to make it)
Sasla, as much as desired

THE METHOD
Preheat the oven to 200c and on two baking trays, brush your tortillas on both sides lightly with olive oil. Bake for 10 minutes, turning over half way through.

While the tortillas are baking, fry the eggs.

When the tortillas are finished, remove from the oven and spread warmed refried beans over each tortilla

The place your eggs, pico de gallo, salsa and cheese on each tortilla as desired.

Healthy Egg Muffins Recipe

If a food can be eaten for breakfast, lunch and dinner, you'll find me making it. Although I love making food and trying new recipes, I'm very practical when it comes to cooking so a multi-tasking, long lasting meal that can be cooked in bulk ticks all my boxes.


When I make these veggie filled egg muffins, we'll eat them for days afterwards either as a post-workout snack, for dinner or breakfast (my personal favourite time to eat these). Even reheated in the microwave, these taste as good as they did fresh out of the oven. I love that not only do they taste great, but they are packed full of vegetables and also a hint of chilli for an unexpected warmth. The absolute BEST part about this recipe? It is SO simple and inexpensive to make. You probably have most of the ingredients in your kitchen already and spending 20 minutes whipping these up creates time saved on making breakfasts, lunches and dinners for the days that follow. The return on investment is real.

DETAILS

(per muffin)

INGREDIENTS
-1/2 white onion, chopped
-2 cloves garlic, chopped
-1 chilli pepper, chopped
-1/2 courgette, grated
-1 red bell pepper, chopped
-8 large eggs
-2 cups rocket, roughly chopped
-1/4 cup Parmesan cheese, grated
-salt and pepper (as desired)

METHOD
Preheat your oven to 190 degrees Celsius and coat a muffin tin with cooking spray and set aside. I used an "extra deep" tin of 6 but a regular tin of 8 would also work.

Pan fry your onion and garlic, then once they are browned add your courgette, chilli and red bell pepper to the pan and sauté.

Fill the bottom of each muffin tin with even amounts of the sautéed vegetable mixture, ensuring they are patted down tightly and flat.

In a mixing bowl, whisk together the eggs, rocket, cheese, salt and pepper.

Then pour that mixture evenly into the muffin tins. Do not fill completely to the top as they will rise significantly when baked!

Bake in the oven for 15-20 minutes until your egg muffins have risen and are golden.

Healthy Sprinkle Cookie Dough Bites (Vegan, Gluten Free)




I am forever scrolling through Pinterest for healthy recipes to try out. I am not a natural in the kitchen - my skills would probably be better suited in a crematorium - so I'm mostly drawn to easy recipes containing ingredients which I have around the house. This recipe is inspired by Big Man's World Healthy No Bake Unicorn Cookies, which I knew I had to try the second I stumbled across it.

If you struggle to satisfy your sweet tooth, these handy bites are great to grab when you feel a craving coming on. Although they are extremely sweet, they are 100% guilt free, being only 38 calories per bite. They are also vegan, gluten, dairy, refined sugar free AND paleo (minus the sprinkles)! But if you do follow a strict paleo lifestyle and don't want to miss out on the sprinkles, here is a recipe by Oh, The Things We'll Make to whip up your own.

I find coconut flour extremely easy to work with and also like the subtle coconut taste that it gives to these bites. If you are allergic to coconut or would prefer not to use it, you can use oat flour instead, but you will need to use twice as much (1 1/2 cups). Please note, you cannot substitute the flour with regular grain flour as this is a no bake recipe and it's not recommended to eat grain flour raw. 

You need a LOT of smooth cashew butter for the recipe and I'm well aware that it's on the pricey side. So, if you want to use an alternative you can use any smooth nut butter. Cashew and almond butters will keep the bites neutral and creamy in taste, whereas peanut butter will give a strong peanut taste. 
In Big Man's World's original recipe, he used Maple Syrup instead of the Golden Syrup which I used. Any kind of natural sweetener is great to use such as rice syrup, coconut nectar or honey. Of course, it is arguable whether honey is vegan or not, so keep that in mind if you're cooking for vegan friends.

I adore the texture of these bites. They're chewy and fudge-like with a nice little bit of crunch from the sprinkles. I like to store mine in the freezer to make them more solid and crunchy, but if you'd prefer them softer, simply keep them in the fridge or at room temperature.

Preparation time 5 mins | Setting time 30 mins | Serving size 24 | Calories per bite 38

Ingredients

3/4 cups of coconut flour
2 cups of smooth cashew butter
1/2 cup golden syrup
2 tbsp of sprinkles

Method

1. Line a plate or baking tray with non-stick baking paper. Be sure it will fit in your fridge or freezer.

2. In a mixing bowl, add your coconut flour, cashew butter and golden syrup and mix together until fully combined. If you feel that the batter is too thin and sticky, add more coconut flour. If too thick, add some milk or water.

3. Mix your sprinkles through the batter.

4. Form small balls with the batter and put onto the baking paper. Use a spoon or fork to press the balls flat. You should be able to make approximately 12.

5. Refrigerate the batter for at least 30 minutes to firm them.

6. Take from the fridge and using a knife, score the curved edges of the batter to create straight edged squares. Then cut these in half to make the rectangle shaped bites.

It's been a hot minute since I fell hard in love with a new product, but these eyeliners by Too Faced are changing the game and your girl truly can't put them down. 

The Too Faced Glitter Pop Eyeliners are everything a glitter junkie could dream of and more. Available in 8 different shades, they can provide a subtle touch of glitter or a full blown explosion of vibrant shimmer. 

I own 7 of the 8 shades in the line, here is a description of those 7 shades below, and you'll be pleased to know that the liners are as fabulous and sassy as their names:

I'm Half Mermaid - Teal/Aqua
Super Fun Night - Silver
Glitter Ghost - Holographic/Iridescent
Kitty Glitter - Pink

I am no eyeliner master, so for me good applicators are essential when it comes to eyeliner, otherwise I end up just making a hot mess. I tend to gravitate towards angled applicators which I find give me a massive helping hand when it comes to winged liner, so I'm not going to lie and say the words 'oh no' didn't flash across my mind when I first latched eyes on these applicators. They are quite short and straight which instantly made me feel like I was going to make a horrendous mess. I was relived to quickly experience that the applicator actually made for really easy applying, and for someone who dreads the thought of putting on her winged eyeliner, I manage to do it quickly and neatly with these liners. For me, that's everything I could ever wish for.

In addition to the dreamy application, the product itself is to die for. The glitter swipes on fairly sheer but are buildable so you can create shimmery wings that are as pigmented as you want them to be. The buildable coverage also means this would be great as a pop of glitter in your inner corner or a subtle layer of glitter on your lips - it's a great product for versatility. 

I can't express enough how impressed I am with the vibrancy of the shades. When applied, they look gorgeously bright, but they dry down to an even more spectacular gleam of glitter. I'm particularly obsessed with I'm Half Mermaid and Glitter Ghost. The aqua tones of I'm Half Mermaid make my blue eyes pop and while it's a bold colour, I actually find it really wearable, especially as it makes me feel confident enough to work it. At the other end of the spectrum, Glitter Ghost is the most subtle of all of the shades, but arguably the prettiest. The slightly pink, iridescent shade is so bloody beautiful, it truly doesn't get more fairy princess than that. And that's totally the look I strive for.

Now, let's talk about the peel off aspect of the eyeliner. I don't take shortcuts when it comes to my skincare, so on a day to day basis, I'm more than happy to properly remove makeup even if it takes me a little longer. That being said, I was excited to try the peel off eyeliner as it's not something I've come across before. Let's just say, it's kinda cool and kinda peel off, but it's not something I'd ask you to get excited about. In some places, it peeled off really effortless which was nice and it did feel satisfying to be able to pick it off. But, with some bits I felt like I really had to scratch at my eye to peel it which I just didn't like. If I had to choose between cleansing balm and scratching the fuck out of my eyes, I know which one I'd rather be doing. 

That being said, this really is such a minor part of the product and it hasn't stopped me wanting to use these every time I apply my makeup. Seriously, every single time. I really do adore these products, they are something pretty special.

Favourite Four: Blushers

Nothing perks up the face and adds vibrancy to a makeup look quite like blush. It's the perfect way to not only make your complexion look youthful, radiant and glowing, but also enhance the structure of your cheeks. Here are my all time favourite blushes that I turn to for an instant beauty boost....


If I had to wear one tone of blush for the rest of my life, it would be peach. I adore the subtle glow it gives my complexion and the Too Faced Papa Don't Peach blush is my favourite peach blush. The formula of the blush is sheer and ever so slightly glistening to really make this look like a kiss of colour on your cheeks. I am always fearful of over applying blush, so the sheer texture works for me as I know I can build the colour and have control over what I'm applying. 

As well as being gorgeous in colour and texture, the Papa Don't Peach blush smells insane. When I apply it, the scent on peaches wafts over me which is an extra treat on top of an amazing quality product! 


When I'm looking for a blush which oozes sultry seduction, this is my go to. The deep rosy, brown shade is absolutely stunning and gives a smouldering wash of colour over my cheeks. Love Joy is my go to on date night or a night out as it is super glamorous and sculpting, which I adore.

As this blush is on the darker side, the application needs to be sheer but buildable, which this is. It ticks all of my boxes in terms of texture and longevity, I know this will be my ride or die for a long time! 

Bare Minerals Gen Nude Blush in That Peach Tho - Releasing Spring 2018

I couldn't help myself but throw another peach in my blush favourites. But in contrast to Papa Don't Pesch, this Bare Minerals blush is extremely matte and deeper in colour, almost a terracotta shade. 

The matte finish of the blush makes for a solid and stunning saturation of colour, so a little product really does go a long way. I actually love this colour to wear on its own without a contour, it's strong enough to be worn alone and still subtly sculpt the cheeks.


This gorgeous matte pink really is as pretty it looks. I tend to steer clear from pink blushes, but this shade has me hooked. The blush is a bright pink with a slightly peach undertone to it. This is my absolute favourite on holiday or in the height of summer. 

The blush is highly pigmented and blends seamlessly into the skin, making for a stunning natural glow. The blush promises 12 hours of long wear, and it really is as good as it claims to be. I know I can rely on this for a flawless look from dawn until dusk.

Autumn Skin: The Essentials

This year it felt like I blinked and summer was suddenly over. Today I'm looking out my window and the trees are sparse and orange and when I step outside of a morning, my breath is a chill cloud. We all know when it's time to switch up our wardrobe for the colder months, but what about our skincare routines? My skin has been a lot drier, blemish prone and dull since the weather turned, and I'm sure I'm not the only one. Autumn skin is different so requires different care and these are the products I dust off when the temperature drops.


Overnight treatments are amazing at the best of times, but especially when it's colder in the evenings... Simply apply, snooze and wash your face as usual in the morning - it really doesn't get more effortless than that. I've found myself reaching for the Cloud 9 Deep Nourishing Sleep Mask so much recently as it gives my skin the moisture fix it's craving. The mask contains avocado oil which provides intense hydration and also helps slow down signs of ageing. Lush!


When I need a bit of heavy duty hydration, this is my go-to. Despite being so creamy and thick in texture, this doesn't make me appear over oily at all and instead gives me the radiant, healthy glow which I covet. This is also just the right texture to act as a moisturiser and primer, so I cut out the middle man between my skincare and makeup when I use this product. I would also especially recommend this moisturiser for sensitive skin, it's ingredients are designed to be extra gentle and loving. Issa French pharmacy thing, they have sensitive skin covered.


Who doesn't love a face spritz? The only thing better than a refreshing, rehydrating spray, is one that contains insanely skin loving ingredients. Calming rose essential oil is the leading lady in this toning spray, which is amazing for nourishing and soothing skin and this spritz also claims to be particularly good for rosacea sufferers. Simply apply this before moisturising to instantly balance and hydrate your complexion. You can also use this throughout the day as a cooling, hydration top up. 


I adore this moisturiser for making my skin look youthful and plump in a flash. I find this great for every day use as it is comfortable, majorly hydrating but also not too heavy for my oily skin. If you want even more of a hydration hit, apply for 5-10 minutes as a mask. I also love that not only is this great for nourishing dry skin, but this product protects against pollution and other environmental aggressors, which is ideal for me working in London.

The Hangover Edit

When you're living it up with your sixth glass of prosecco, the furthest thing from your mind is how horrific you are going to feel in the morning. For me, the morning after the night before is not a pretty sight. Aside from the shakes and crippling nausea, I normally find myself pale, dry, with massive bags under my eyes and on the verge of a major breakout where I've more than likely passed out in bed without taking my ten tonne of slap off.

The day after a heavy night, I have to take extra precaution to even slightly resemble my normal self and there are few products that you will always find me reaching for when hungover,


Drinking transforms my normally oily skin into a dry, pasty mess overnight. I adore this Too Faced primer on the best of days, but I am especially grateful for it when suffering a hangover. The creamy consistency of this primer delivers my skin an intense hit of hydration, which instantly brightens up my dull complexion and makes it look and feel healthier. Plus, it smells like coconuts - what's not to love?!


My under eye bags are unforgiving when I've treated myself to one too many. Not only do they appear in full force, but they are often very purple toned, which makes me resemble a dead body. Beaut. Colour corrector is my go-to in this instance and I opt for this liquid Bobbi Brown one as it a lot more hydrating and gentle than more solid creams. The texture allows it to apply more evenly and naturally when my skin is dehydrated for quick and comfortable under eye bag extermination.


There's nothing that fakes awake better than a light eyeliner. I swipe this gorgeous nude liner into my waterline to breathe new life into my haggered, hungover face. I like to use nude instead of white when hanging as it looks more natural and give a subtle and soft pop to my eyes. 


Blush is a massive must when I'm looking more than a little lack lustre. A subtle wash of colour makes the world of difference and gives a healthy, natural glow to your complexion. For this, I adore the Morphe Blush Palette which contains 9 unique shades, perfect for any skin tone and makeup look. I simply pick up a small amount on a big powder brush and then apply onto the apples of my cheeks, dragging the product across my cheeks towards my ears.
